ผมชื่อ John Jasins เป็นเชฟเจ้าของร้าน Smash Daddy’s ครับ อายุ 46 ปี ผมมาจากสหรัฐอเมริกา ใกล้ ๆ เมืองบอสตัน ผมโตนอกเมืองบอสตัน ผมเป็นเชฟในอเมริกาประมาณ 20 ปี ในรัฐนิวยอร์กและแคลิฟอร์เนีย ทำหลายอย่างที่แตกต่างกันไป
ผมย้ายมาอยู่ที่ประเทศไทยประมาณ 7 ปีที่แล้ว ซึ่งตอนนั้นผมกำลังทำโปรเจกต์เกี่ยวกับอาหาร และในที่สุดเราก็เริ่มทำธุรกิจเบอร์เกอร์นี้
My name is John Jasins and I’m the chef-owner here at Smash Daddy’s. I’m 46.
So I’m from the United States of America, near Boston. I grew up outside of Boston. I was a chef in the US for about 20 years, in New York, California, doing all types of different things.
I moved to Thailand about 7 years ago, where I was doing some food projects, and eventually, we started this burger business.

ผมชอบทำอาหารมาตลอด ผมเป็นเชฟมาประมาณ 20 ปี และผมทำอาหารไฟน์ไดนิ่งในสหรัฐอเมริกาที่นิวยอร์กและแคลิฟอร์เนีย แล้วผมก็มาที่นี่และทำอาหารให้กับธุรกิจบางแห่ง ผมเคยมีร้านอาหาร ร้านอยู่แถวๆตรงนี้เอง
ตอนช่วงโควิดที่เราเปิดร้าน มันอยู่ได้แค่ปีเดียวเพียงเพราะมันไม่ใช่ช่วงเวลาที่ดีที่สุด และผมชอบทำเบอร์เกอร์มาตั้งแต่เด็ก ตอนเด็กๆ ผมมักจะทำแฮมเบอร์เกอร์และชีสเบอร์เกอร์ให้ครอบครัวเสมอ ดังนั้นมันเป็นอะไรที่ผมชอบมาโดยตลอด และในส่วนของอาหาร ผมก็ชอบกินเบอร์เกอร์ด้วย ผมกินเบอร์เกอร์ของตัวเองแทบจะเกือบทุกวันเลย
So I’ve always loved to cook. I have been a chef for 20-something years and I did fine dining in the United States in New York, California and then I came here and I was cooking for a few different businesses. I had a restaurant. It was actually right back over here.
During Covid that we opened, it only lasted for about a year just because it was not the best timing. And I’ve always loved cooking burgers. When I was a little kid I always used to make my family hamburger, cheeseburger. So something that I always just loved. And as for food, I just love to eat burgers as well. I eat my burger almost every day.

ผมเคยผ่านการฝึกอบรมในร้านอาหารมิชลิน ผมผ่านการฝึกอบรมจากร้านอาหารระดับดาวมิชลินกับมิชลิน ดังนั้นผมไม่อยากเรียกตัวเองว่าเป็น “เชฟมิชลิน” เท่าไหร่ แต่ผมได้รับการฝึกอบรมจากร้านอาหารชั้นเลิศระดับไฮเอนด์ไฟน์ไดนิ่งมาครับ
I was trained in Michelin restaurants. I was trained with Michelin training Michelin star restaurant, so I wouldn’t I don’t want to call myself a “Michelin Chef” for say. But I had the training from high-end fine dining.
แล้วทำไมถึงมาที่เชียงใหม่? ก่อนหน้านี้เคยมาไหม? / So why did you come to Chiang Mai? Have you been here before?
“เมื่อก่อนผมเคยเดินทางมาประเทศไทยตอนที่ทำงานอยู่ที่อเมริกา ผมจะใช้วันหยุดมาที่ไทยหรือประเทศในเอเชียตะวันออกเฉียงใต้ และครั้งหนึ่งผมก็มาที่เชียงใหม่และได้พบกับเพื่อนๆ ที่นี่ และผมก็มีช่วงเวลาที่ดีมากที่นี่ ผมชอบจังหวะชีวิตที่ไม่รีบร้อนของเชียงใหม่และชุมชนที่นี่ ดังนั้นในปีถัดมาผมจึงกลับมาและตัดสินใจย้ายมาอยู่ที่นี่ มันเป็นที่เดียวในประเทศไทยที่ผมอยากย้ายมาอยู่ครับ”
“ย้ายมาอยู่ที่นี่ถาวรใช่ไหม?”
“ใช่แล้ว เมื่อ 7 ปีที่แล้ว”
“I used to travel to Thailand back when I was working in America, I would take my holiday to come to Thailand or Southeast Asia, and one time I came to Chiang Mai and I met some friends here and I had a great time. I really liked the kind of the low pace of Chiang Mai and the community here. And so the next year I came back and I just decided to move here. It was kind of the only place I wanted to move to in Thailand.”
“So you move here permanently?”
“Yes, So yes 7 years ago.”
รักอะไรในเชียงใหม่ หรือมาหลงรักสาวเชียงใหม่หรือเปล่า? / What do you love in Chiang Mai? Or have you fallen in love with a Chiang Mai girl ?
สาวเชียงใหม่ก็น่ารักดี แต่ผมก็ชอบอาหาร ชอบผู้คนที่เชียงใหม่ ผมชอบที่มีภูเขาอยู่ตรงนั้นให้มองเห็น และแค่จังหวะชีวิตที่นี่ก็ดีมากจริงๆ ครับ
Chiang Mai girls are great but I really do also love, I love food, I love the people of Chiang Mai. I love having a mountain right there too to see and just the pace of life itself. It’s great here.
แล้วคิดว่าเบอร์เกอร์จะถูกปากคนเชียงใหม่ไหม? / And do you think the burgers will appeal to Chiang Mai people ?
ผมคิดว่าใช่ครับ เราได้รับการตอบรับที่ดีมากจากลูกค้าจากอาหารเรา ผมคิดว่าคนเชียงใหม่ส่วนใหญ่ที่มาลองเบอร์เกอร์ของเราชอบมันมาก

I think so. Yeah, we have a lot of great responses to our food. I think most of the Chiang Mai people that have come to get our burgers and enjoy it very much.
If they never try the real burger they should come here?
Yes, absolutely a real American-style burger.

“The highlights of my burger we use very high-quality beef and pork. The beef itself is grass-fed beef from a New Zealand high-quality bun and we make all the sauces here in-house. All the toppings, all the sauces. We make everything here. So it’s all homemade.”

เมนูแนะนำก็คงจะเป็น Smash Daddy ซึ่งเป็นเหมือนเบอร์เกอร์แบบคลาสสิกของเรา เป็นเบอร์เกอร์อเมริกันคลาสสิก ต่อไปน่าจะเป็น Sweet Baby JJ’s ซึ่งเป็นเมนูขายดีอันดับสองของเรา มีซอสบาร์บีคิวเบคอน ทำให้มันมีรสออกหวานนิดๆ และมีเบคอนอยู่ด้วย อีกเมนูใหม่ที่เราเพิ่งใส่ในเมนูคือ Mac Daddy ซึ่งเป็นมักกะโรนีในชีสเบอร์เกอร์ มันอาจฟังดูแปลกนิดหน่อย แต่จริงๆ แล้วมันอร่อยมาก ใช่ครับ Mac Daddy
The recommended menu would be the Smash Daddy is like our classic burger classic straightforward Burger American style. The next would probably be the Sweet Baby JJ’s which is our second biggest seller. It has a barbecue bacon jam. So it’s a little bit sweet. It’s got some bacon on it. Another new one that we just put on the menu is the Mac Daddy, which is a macaroni and cheeseburger. So it’s very, it sounds a little weird, but it’s really good. Yes, the Mac Daddy.

ครับ เรากำลังสร้างและเติบโตอยู่เสมอ เราเพิ่งเพิ่มไก่ทอดแบบอเมริกันลงในเมนูเมื่อไม่นานมานี้ เราทำสิ่งที่เราเรียกว่า Burger Lab พวกนี้เป็นเมนูพิเศษของเรา ก็เราจะทดสอบวัตถุดิบใหม่ๆ ที่นี่ เรามีห้องเตรียมอาหารของเราเองที่ชั้นบน ดังนั้นเราจะทดสอบเมนูใหม่ๆ เพื่อดูว่าลูกค้าชอบหรือไม่ นี่คือสิ่งที่เรากำลังทำอยู่ในตอนนี้ครับ

Yeah, so we’re always building and growing. We just recently put a chicken fried chicken American-style fried chicken on the menu. We also do what I call a Burger Lab.
So these are our specials. So we’ll test out different items here. We have our own prep kitchen upstairs. So we’ll test out items to see if people like it. So this is what we’re working on right now.
